Coffees grow in small farmers' backyards, known as “garden coffee.”
Hand sorting of only ripe, red cherries at 20-22º Brix ensures a 90+ ripeness rate for this lot.
Cherries are placed inside sealed tanks and flushed with N2.
Controlled yeast activity, temperature, and humidity are maintained within the tanks.
Extended anaerobic fermentation occurs at controlled temperatures.
Cherries are pulped and thoroughly washed before being laid out to dry on raised beds.
Drying typically takes 25-30 days to reduce moisture content to 10-12%.
Dried beans are then stored in parchment for protection until milling and export preparation, during which further hand sorting and color sorting are conducted to enhance overall quality.
